Meatballs With Rice Recipe a.k.a. “Hedgehogs”

Meatballs with rice are called “hedgehogs” in Russia and are well-known in most households. Don’t be scared though, hedgehogs have nothing to do with this recipe, perhaps the name comes from the way these meatballs look with those rice seeds sticking out, making them look like “needles” of a hedgehog. The regular meatballs are often dry on the inside, but this recipe always creates moist and melt-in-your-mouth meatballs. Once you try these little darlings, I am sure that this will be the only recipe you will use in the future. Enjoy!

Serving Size: 6-8 people

1-1½  lbs ground pork
2-2½ lbs ground beef
2 medium carrots
2 eggs
2 cups of white rice
1 onion
1 clove of garlic
2 sticks of celery & handful of parsley
1-1½ jar of tomato sauce
Salt & Pepper
*Large pot (5 liters or more)


Step 1.

Measure out 2 cups of rice

and 3 cups of water.




Step 2.
Place the rice and the water into
a medium size pot.

Step 3.
Turn the heat to medium heat.

Note: Do not cover, as we want
the rice to be half cooked.

Step 4.
Set a timer for 15 minutes.



Note: While waiting for the rice, move

on to the next step.


Step 5.

Peel the onion and garlic, then place

them into a blender.



Step 6.

Break 2 eggs into the blender.


Step 7.

Place celery and parsley into the mixture.



Note: You could use any available flavor of parsley, Chinese or regular. Add other ingredients to taste, such as chili pepper or dill.


Step 8.

Blend the mixture into a smoothie






Step 9.

Check on the rice.




Step 10.

Once all the water is gone,

remove from heat and let it cool.



Step 11.

Unpack the meat and

place it into a large bowl.



Step 12.

Pour the blended mixture

into the meat.




Step 13.

Peel and grate the carrots.



Step 14.

Place the grated carrots into the

bowl with meat and add 2

teaspoons of salt.



Step 15.

Mix all the ingredients

with your hands (not a mixer).




Step 16.

Add the half-cooked

rice to the bowl.




Step 17.

Add 1 teaspoon of pepper.



Step 18.

Mix everything together

using your hands.




Voila – now you are ready

for the final step in the process.



Step 19.

Add pasta sauce and 2 cups

of water to a large pot.





Step 20.

Place the pot on

medium-low heat.




Step 21.

Let the sauce boil.



Step 22.

Using your hands, start making

medium sized balls out

of the meat mixture.


Step 23.

As you form the meatballs,

carefully place them

into the hot sauce.


Note: Do not turn off the heat.


Step 24.

Place all the meatballs

into the pot.


Note: The sauce will rise

as you add the meatballs.




Step 25.

Cover the pot.


Step 26.

After the liquid boils,

leave the pot on heat for

20 minutes or so.


Note: Don’t worry about over cooking.


These scrumptious little meatballs could be served on their own or along with a side dish such as mashed potatoes, spaghetti and vegetables. Don’t forget to pour the yummy sauce over your side dish for added flavor and unity. Enjoy!
